Introduction: Haskap Berry Cheesecake

MMMMMM CHEESECAKE! Who doesn't love cheesecake? I had no idea what haskaps were until I was picked some at our local berry farm. They taste amazing so I thought I would give them a try in a cheesecake. (If you use gluten free graham cracker crumbs your cheese cake will be gluten free)

Step 1: Ingredients

1 ¾ cup graham crumbs

¼ cup melted butter

3 cups haskap berries

1 cup sugar divided

3 Tbsp cornstarch

2 pkgs cream cheese

¼ cup sugar

1 tsp vanilla

1 cup whipping cream

Step 2: Graham Cracker Crust

mix 1 ¾ cup graham crumbs and ¼ cup melted butter. Press the mixture into the pan and bake at 350 degrees for 8-10 min.

Step 3: Berry Topping

In a medium sauce pan add 2 cups of water, 3 cups of haskap berries, and 1/2 cup sugar. Stir frequently on med/high heat and bring to a boil. Reduce heat to medium. Mix 3tbsp of cornstarch with 3tbsp of water until smooth and add to the berries and stir until the mixture thickens. Remove from heat and let cool completely. I cool mine in the fridge. The mixture will thicken more as it cools.

Step 4: Cream Cheese Filling

Beat 2pkgs of cream cheese until smooth, then slowly add 1/2 cup sugar and 1 tsp of vanilla. Beat mixture until well blended. In a separate bowl whip the cream until it forms soft peaks and then slowly add it to the cream cheese mixture.

Step 5: Putting It All Together

Smooth the cream cheese mixture evenly over the cooled crust and then pour the cool berry mixture evenly over the top. Place in the fridge overnight and allow to cool.

Step 6: Enjoy

Idle curiosity--what part of the world do you live in? I am wondering if these berries grow anywhere near Michigan? They look kind of strange and my boys are rather adventurous when it comes to new and different produce.

We live in Yukon Territory, Canada. According to the Wikipedia page, these berries can be found all over the world. You might just know them as a different name. :)

I googled haskap. I have never heard of them under any of their names. They do sound interesting.
