Strawberry butter is an amazing way to take advantage of all the summer strawberries - plus, no cooking required! It's super quick to make and it's so wonderful on warm bread or rolls.

I always looked forward to having strawberry butter when I was growing up. It's one of the best sweets there is. :D

Step 1: Ingredients:

  • 1 cup unsalted butter (2 sticks - softened!)
  • 1/2 cup fresh strawberries, cut into small chunks
  • 1/4 cup powdered sugar
You'll also need a hand mixer and a sieve. 

Try to get the juiciest, most strawberry-smelling strawberries you can find. Greenhouse/unripe strawberries just do not do this dish justice.

I do not recommend using normal sugar for this recipe - it can turn the butter into a grainy mess.

Step 2: Prep + Mix

It took me almost 5 large strawberries to get 1/2 cup of diced strawberries. I cut off any parts of the strawberries that were green or white.

Once the strawberries are prepped, put your butter into a bowl and mix it until creamy. Then pour 1/4 cup of powdered sugar into a sieve and shake it into the butter. Add the chopped strawberries and then mix well!

I like to keep mixing into the strawberries break down a little more and the butter turns nice and pink. Make sure you're scraping the sides down from time to time!

Step 3: Storing + Servingi

I normally like to put this straight into the fridge after I make it, and pull it out a few minutes before I serve it so it softens a little. It's always good to put it in lots of little bowls to make serving easier!

I'd say it will probably keep in the fridge for a week, but it's always best right away. :D

    Mine didn't go right until I added a bit of milk cream. Before that the butter and the strawberries just wouldn't mix right and it wouldn't turn nice and pink.

    That sounds yummy. Can't wait to find some strawberries!

    Raspberries also work nicely, maybe better because they have more intense flavor.
    However, raspberries have tiny seeds which might make this a bit "gritty", if that is a problem.

    I'm sure you could! I bet they'd be lovely because they break up so easily.

    Do you have to sweeten it? Or does the sugar make it a little firmer? Looks good!

    You don't have to, but the sugar definitely helps offset the liquid that the strawberries add. I bet if you cut them beforehand and popped them in a strainer for a bit it might help. :D
