With my new healthy goals of eating right I have stopped buying junk food. So when it was time for the Sunday potluck I wasn't sure what to bring. I didn't have the ingredients to make my cute sugary frosting creation cupcakes but I did have plenty of strawberries and granola! It's possible to make healthier desserts and still have taste! Ingredients 2 cup whole wheat flour 3/4 cup brown sugar 1/2 teaspoon salt 2 teaspoon baking powder 1 cup vegetable oil 1 egg 1/2 cup milk 1 cup granola chopped 1 cup strawberries chopped Ingredients for frosting 1 container fat free cool whip 1 package sugar free fat free vanilla pudding 1 cup vanilla almond milk 1 cup strawberries sliced https://m.facebook.com/FocusFitnessGroup
Step 1: Prep and Start
Pre-heat oven to 350 degrees Prepare cupcake pan with papers. In a large mixing bowl, combine the dry ingredients and whisk to combine.
Step 2: Mix Dry and Wet
Mix liquid ingredients into dry ingredients and stir. Fold in 1 cup of the granola and strawberries. Fill cupcake pan with full scoop of batter into each cup. Sprinkle with remaining granola. Bake for 20-25 minutes until muffin springs back or a knife is inserted and comes out clean.
Step 3: Frost
Once cooled make frosting In a medium bowl, combine pudding mix with milk. Mix until smooth. Gently fold in whipped topping until no streaks remain. Spread evenly over cupcakes. Then top with sliced strawberry.
